La Table Du Nord

This book tells the story of Northern Tunisia, its food, its products, its land, and most importantly, its people. We traveled across the northern part of the country to meet the locals, share their food, and live with them. They generously shared their recipes, introduced us to their products, and guided us through their towns and villages. This book contains over 100 recipes, insights into 24 local products, and highlights seven specific traditional skills. It is the first volume of a collection that will cover all regions of Tunisia.
La Table du Nord is a project by the BIAT Foundation and is part of its initiatives to promote and transmit Tunisia’s intangible heritage.
